After having made so many cookies which only needed egg yolk I had some egg whites left over. Of course I didn´t want to throw it out so I used a great recipe for “Amarettini” in order to make new cookies and use all the egg white.
It´s not only super easy but also super delicious as well and they are great when you are having cappuccino.
300 gr ground almonds
3-4 egg whites
200 gr sugar
1 pinch of salt
arome of bitter almond (ca.12 drops, but use as you like it best)
Beat the egg whites and the pinch of salt until stiff.
Mix almonds together with the sugar.
Add the egg white and stir carefully. Now add the arome of bitter almonds just to your taste.
Preheat oven to about 300°Fahrenheit,
Shape the mixture to cherry-sized balls and bake for 25 minutes.
