Plum crumble muffins

Ready for dessert? The fruity, juicy and crunchy plum crumble Muffins are more than delicious..


recipe for 12 muffins:
250 g (9 oz)  flour
2,5 tsp baking poweder
125 g (4,5 oz) sugar
1 tsp vanilla extract
1 egg
250 g (8 oz) yoghurt
80 ml (3/8 cup) vegetable oil
350 g (12 oz) plums

for the crumble:
100 g(3,5 oz) flour
50 g (2 oz) ground almonds
75 g (3 oz) brown sugar
75 g (3 oz) soft butter

Preheat oven to about 375° Fahrenheit.

Mix flour with bakingpowder and sift it. Remove the plums´ cores and cut them into pieces.

Mix sugar and the egg together, then add vanilla extract, oil and joghurt.

Now carefully mix in the sifted flour/bakingpowder and the plums.

For the crumble, put the flour in a mixing bowl together with the rest of the crumble ingredients. Whisk all the ingredients together.

Fill the muffin-mixture into the muffin moulds and spread the crumble on top.

Bake them for about 25-30 min in the preheated oven until they are goldbrown.
