Ice Cream Cone Muffins

Fräulein Streusels Muffins in der Waffel

I found these awesome muffins on the internet the other day when I was looking for sweet fingerfood for our acting agency´s reception at the Berlinale film festival.
They are fantastic as fingerfood at your kid´s next birthday party as well because they are small and handy and you can eat the whole thing without having to worry about garbage or sticky fingers at the end :-).

In Germany we have these great little “Eierlikoer”-Becher (little chocolate covered waffle cups for egg nog, ca. 1,3 inch high) in which I use to bake these muffins. You can also use any other (ice cream) cone you want, but the bigger it is the longer you need to leave it in the oven.

Do you have already your own favorite muffin recipe? Great, then go ahead and just use your favorite one to make them. If you want to try out a different one, just try this one. It is
the basis recipe of my pear-crumble-muffins (without the pears of course 🙂 ).

For the dough:
250 g (9 oz) flour
2,5 tsp baking powder
125 g (4,5 oz) sugar
1 tsp vanilla extract
1 egg
250 g (8 oz) yoghurt
80 ml (3/8 cup) vegetable oil

plus ca. 32 egg nogg wafflecones (or any other ice cream cone you prefer)

for the decoration:
200 g (ca.7 ounces) melted chocolate, optional
400 g (ca. 14 ounces) whipped cream
food coloring and edible decoration

Preheat oven to about 350° Fahrenheit.

Mix flour with bakingpowder and sift it.
Mix sugar and the egg together, then add vanilla extract, oil and joghurt.
Now carefully mix in the sifted flour/bakingpowder.

Place the cones on a baking sheet and fill the dough into them. Don´t fill it up to the top though since the dough will rise, just about 3/4 of it.

Mine took a little longer, about 17-20 minutes, but it always depends on your oven and then again on what size your cones are.

Then you can cover the top with melted chocolate, and either decorate the chocolate already with M&Ms, Skittles, candies or whatever you like or you let the chocolate dry and decorate the muffins then with (colored) whipped cream and you favorite topping.
